Why do dealers have advantage in blackjack?

Basically, you must defeat them; but, they are not obligated to defeat you.
You must place your wager first since that is how casino gaming works. Up until you win, the casino does nothing. Therefore, if you place money on the table for a game, that "bet" is actually in play and cannot be reversed. Why is this crucial?
Imagine you and six other players are playing blackjack (plus the dealer). The dealer is handed cards, and the first one is an 8. Player 1 stays with 17 points, while Player 2 has Player 3 has a 15 and hits and loses; Player 4 holds pocket 8s and divides his cards to produce an 18 and a 14 that he hits and loses; Player 5 holds a 12 and hits and makes an 18; And Player 6 holds a 17 and retains.
